Kissaki is seeking an experienced Lead Sushi Chef, you will join the team of Kissaki in our Manhattan, NYC location at 319 Bowery.
RESPONSIBILITIES:
Leading the team in efficiency, being able to present the nigiri/appetizers in detail
Cutting, chopping, slicing, and fileting different types of produce/proteins (especially different types of fish)
Inspecting the quality of fruits, vegetables, fish, and other foods used to prepare dishes and informing the Executive Chef when quality is sub-standard
Preparing various dishes according to established guidelines on quality, portion size, presentation, and food safety.
Sterilizing all utensils, instruments, and equipment used in sushi preparation before/during/after every use.
Ensuring that all prep list/checklist and any ordering need is being done every day for consistency purposes.
The ability to work under pressure while maintaining the best product quality
To be successful as a team member at KHG, you must ensure that all ingredients used in dishes are of the highest quality.
Ultimately, an exceptional member should work well under pressure, work well with a team, and maintain restaurant standards at all times.
REQUIREMENTS:
A minimum of 5 years as an Omakase Sushi Chef preferably at an upscale restaurant
Extensive knowledge of Japanese food and culture
Proficient in English
Advanced knife skills
Availability to work nights, weekends & holidays
Positive attitude
The ability to stand for long periods of time
Excellent time-management skills
Job Type: Full-time
Additional Compensation:
Total Comp is $1,800/week.
